One of the many things I love about spring are asparagus! They are so easy to prepare, but tasty all the same. I prefer the traditional Flemish asparagus recipe, but instead of ham I like to use smoked salmon. It gives the dish, in my opinion, a way more refined taste. Once you have tried this, you will not want it any other way!
INGREDIENTS (serves two)
+/- 14 white asparagus spears
3 hard boiled eggs
3 tbsp butter
Finely sliced smoked salmon (as much as you prefer)
Finely chopped parsley (I prefer the flat-leaf parsley, but any other kind will do
Pepper and salt
Peel the asparagus and cut off the end of the spears. Put the asparagus in cold water with a pinch of salt. Put the water to cook and when it starts boiling remove the pot from the heat. Leave the asparagus in the hot water for about 10 minutes with the lid on the pot (make sure the asparagus stay tender-crisp).
Mash the hard boiled eggs with a fork.
Heat the butter in a saucepan (Put it over low heat. Make sure the butter does not start boiling).
Drain the asparagus thoroughly and arrange them on a plate. Put a little egg and smoked salmon on it.
Drizzle the butter over the spears and flavour with salt and pepper. Use the finely chopped parsley for the finishing touch.
INSIDER TIP: while eating, keep the tips of the asparagus for last. They are the most tasty parts!
