Hot Quinoa Salad

So I survived my first day of detoxing! But the thing that I really wanted to share with all of you, was the recipe for this amazing quinoa dish that I had for dinner. It is so healthy, detox-friendly and – something we are always looking for – NYUM! So here we go:

Ingredients (a portion for 2)

–          125 g of quinoa

–          ¼ liter of water or broth

–          2 spring onion

–          1 paprika

–          ½ zucchini

–          50 g of black olives

–          Some basil

–          A pinch of paprika powder

–          Olive oil

–          Peper and salt

–          (you can also add red onion)

Instructions

Place the quinoa and the water in a saucepan and bring it to the boil (Simmer the quinoa for about 15 minutes, or until the grain becomes translucent and the white germ forms a visible spiral on the exterior of the quinoa grain);

Heat oil in an other pan;

Add the paprika and zucchini; sauté until tender;

Add the spring onion (chopped into little rings);

When the quinoa is ready, add it to the vegetables;

Add paprika powder, salt and pepper;

Add the chopped olives and basil;

Serve!

For those of you who are not detoxing: this recipe goes really well with some feta cheese. Bon apetit!
